This is an oldie but a goodie…I remember when Spinach & Artichoke dip was all the rage and on every restaurant menu you could find. That’s when I started making this recipe. Definitely not healthy, but one of the best versions I’ve ever had. Yum.
2 boxes frozen chopped spinach
6-8 oz marinated artichoke hearts
8 oz Philadelphia cream cheese
8 oz sour cream
½ cup butter (can be less)
1 med onion (chopped)
6 oz shredded parmesan cheese
8 oz shredded Monterey Jack cheese8
crushed red pepper
salt, pepper, & garlic to
Cook & drain spinach. Mash & drain artichoke hearts.
Over low heat melt butter. Add onions and spinach. Add cream cheese, sour cream, parmesan, 2/3 of Monterey Jack cheese & artichokes. Add seasoning to taste.
Remove from heat and pour into a dish or bread bowl. Sprinkle remaining cheese and place in microwave (oven if in bread bowl) for about 4 minutes. Serve warm.
