Nothing says the weekend like a homemade breakfast treat…and last weekend I stumbled across a good one!  I was looking for St. Paddy’s Day dinner recipes and discovered this recipe for Baked Oatmeal.  I had been craving oatmeal lately so the timing was right and the ingredients are super simple and honestly things most people always have on hand.  The result of these simple ingredients?  It’s like a warm cookie for breakfast!  So don’t let the health properties of the oatmeal fool you…it’s a bit indulgent but oh so worth it for a weekend treat…

So without further ado, here is the recipe from the Taste of Home website…it’s super easy, but takes a bit of time to cook.  So get it straight in the oven when you wake up.  The recipe also says that it makes 9 servings but it only made 4 for us.  Maybe we’re pigs though!

3 cups quick-cooking oats
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs
1 cup milk
1/2 cup butter, melted
Additional milk

In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk the eggs, milk and butter. Stir into oat mixture until blended.

Spoon into a greased 9-in. square baking pan. Bake at 350° for 40-45 minutes or until set. Serve warm with milk.


We thought it was particularly delicious topped with sliced banana but mixing some dried cranberries or nuts into the batter would also work really well.  The extra milk for serving is essential….don’t skip that part, it just wouldn’t be the same!  Yum.
