Traditional Lomo Saltado made with Filet Mignon of Organic Peruvian Oxes, topped with french fries and a fried egg.  I would be addicted to this dish if it was this good everywhere, incredible flavors and depth.
Mango draped in Camu Camu (rumberry) served with coconut tapioca and a mint syrup.  Fresh, light and perfectly sweet and tart.

Grand Cru: Alpaca Tartar in classic style, wasabi style and Thai style.  So freaking good!
Crispy Guinea Pig with Carapulca (dried potato stew)...almost like dark turkey meat prepared Peking style, delicious and very rich.

First Pisco Sour in Peru...cheers!  They're much stronger and a bit more tart here than how we prepare them in the States
